Working Women – Planning The Weekly Menu For A Smallish Family…?

I am looking for an easy and creative way to do my cooking for the week when I am off on the weekend. I guess this is a 2 part question – I would also like to ask how you eat well during the week without spending a lot of time and a $$fortune doing it? Also, I have one young fussy eater.
I have a large electric roaster oven, large crock pot, small crock pot, electric frying pan, microwave, toaster oven and of course, an oven/range.

    *heres a roast. it is soooooooooooooo good.(if all fails try mac ‘n’ cheese)
    1 chuck roast
    2 c. water
    1 pkg. onion soup mix
    1 pkg. beef gravy mix
    Cook in crockpot on slow all day. (If you like, you can add potatoes and carrots or noodles).
    *costco has already made dinners that just need to be heated up.
    *a hamberger
    *the dollar store has these things called “hamberger dinners.” these are NOT hamberger helper. it is $1 for a dinner that is so easy to make and it feeds my whole family(5). my favorite is the alfrado. it takes about 20 min to make.
    *there’s a couple of ideas for dinner. for lunch try any kind of sandwich or the things up above. for breakfast try eggs and bacon.

    I’m a single, working mom with one slightly fussy eater (6 years old). This is what I do: On or around payday I will sit down with my son and we plan together what we’ll make for the next 2 weeks. I try to think of things that can be “repurposed” to make something new instead of having leftovers all the time as both my son and I aren’t fans of leftovers and they’ll usually just get tossed. For example, on the weekend I might roast a chicken or turkey breast and use the leftovers to make chicken/turkey salad and a big pot of soup (also a great way to use up any veggies that may be going limp in the fridge!). I also make up a big pot of meatless spaghetti sauce at least once a month which I will separate into tupperware and freeze. You can pull one out of the freezer in the morning and that evening use it for spaghetti, lasagna, eggplant or chicken parmesan, etc…
    Anyway, once I’ve planned the meals, I make a grocery list. I’ll go through the pantry/fridge and cross off anything I already have. We usually do “breakfast for dinner” or good old tomato soup & grilled cheese once a week (easy!!!), and most of my weeknight recipes are 20 minutes or less to prepare. I don’t find much use for my crockpot during the week since most recipes call for 6-8 hour cooking times and I’m gone for at least 10 hours/day.
    Some recipes that can be put together on the weekend and frozen until you want to serve them: lasagna, enchiladas, cabbage rolls, and any broth-based soups.
